Purple Protein Sweet Potato Pancakes


Caitlin Greene shared these purple sweet potato pancakes! Great source of protein and healthy carbs! Topped with warm blueberries & sunflower butter mixed with @sportsresearch MCT oil – adding a healthy fat which will help keep you satiated and satisfied through out your morning! ? Recipe below –

  • 1 medium purple sweet potato steamed and skinned
  • 1 whole egg 4 egg whites
  • 2.5 tablespoons coconut flour
  • 1/2 scoop of Chocolate Bone Broth protein
  • 2-3 tablespoons almond milk
  • 1 packet stevia 1/2 tsp vanilla extract

Blend all ingredients in a blender until smooth. Spray your skillet with a non grease spray such as PAM and pour batter onto pan. Allow each pancake to bubble, then flip, serve, add your toppings of choice, and E N J O Y!
