Zucchini Tots with Spicy Emulsified MCT oil dipping sauce!

Ingredients
- Sports Research Collagen Peptides - 1 scoop
- Grated zucchini - 1 cup
- LG egg - 1
- Reduced fat cheddar cheese - 1/4 cup
- panko breadcrumbs - 1/3 cup
Instructions
Directions:
Preheat oven to 400 degrees F.
Spray baking sheet with cooking spray of choice.
Grate zucchini into a dish towel and wring out all the excess water.
Combine all of the ingredients into one bowl with salt and pepper to taste.
Spoon 1 tbsp of mixture to make the tots.
Bake for 18-20 minutes.
